Esselstyn adopted a plant-based diet at the advice of his father, Dr. Caldwell B. Esselstyn, chief of surgery at the Cleveland Clinic, who determined that a plant-based, low fat diet could reverse heart disease and diabetes.

After learning that one of his fellow Austin firefighters a dangerously high cholesterol level of 344, Esselstyn motivated his entire firehouse to follow a plant-strong diet. They save the life of their friend and enjoyed group-wide health benefits.

Since then, Esselstyn has brought his message to fire fighters and average citizens across America. Tomorrow, he bring that message to Union County. He will be sharing his observations about plant-based nutrition with fire fighters from Summit, Millburn and Springfield at the In addition, members of the public are invited to the Whole Foods in Vauxhall at 2 pm for an instruction and book signing.
